Loaded with chicken, celery, parsley, onion, and bell pepper, this salad makes for a nutritionally perfect and filling lunch or dinner.

You can use any chicken part for this recipe. But if I don’t have any chicken leftovers, I simply cook a small chicken breast in some water for this low-carb salad. Then, I use a food processor to shred the chicken. You can do it by hand, but I like the texture that I get after running the cooked chicken through a food processor.

But, of course, there are some low-carb ingredients that you can mix and match for this keto chicken salad. Here are some of the low-carb ingredients that you can add to your chicken salad:

  • Cucumber
  • Red onion
  • Avocado
  • Dill
  • Bacon
  • Mozzarella cheese
  • Cheddar cheese
  • Parmesan cheese
  • Sesame seeds
  • Almonds

If you decide to add some of these ingredients to this keto chicken salad recipe, remember to include the nutritional value of the ingredient. For example, if you also choose to add bacon, the final result of this salad will be slightly higher in calories and fat.

If you think that the only way to serve this keto chicken salad is on a plate and to eat it with a fork, you’re completely wrong. There are many serving options that you can try with this salad to make eating it fun all the time.

My favorite option is to simply wrap the chicken salad into lettuce. I like the crunch that the lettuce gives, and it makes this salad taste even better.

Another option that you can try is to serve it on top of microwave keto cheese bread. It’ll take you only a minute to make it. And you won’t believe it, but you’ll need only three ingredients for this: an egg, olive oil, and some mozzarella cheese. 

Simply mix together one egg, one teaspoon of olive oil, and three tablespoons of mozzarella cheese. Please everything in a small mug and microwave for about 90 seconds. Wait a minute to let it cool down. Then, cut it in half and place the keto chicken salad inside.

Here are some other low-carb options that you can try:

  • Stuff the salad inside a tomato
  • Top off the chicken salad with some low-carb nachos
  • Slice a cucumber and spread it over the slices
  • Place the salad on top of a slice of the keto feta bread
  • Make low-carb cheese shell tacos with the salad inside

Ingredients

  • 6 oz chicken breast cooked and shredded
  • 1 stalk celery chopped
  • 1 small onion chopped
  • 2 oz bell pepper chopped
  • 2 tbsp parsley chopped
  • 3 tbsp keto mayonnaise
