“Unless you can get oregano from a source that truly sells Greek oregano, don’t add it. The “American” oregano is awful! Bitter, and just not the right tatste, I’ve since found that Greek oregano is more like a wild marojoram. The stuff at the regular grocery stores just doesn’t do it. Since many of us have access to order online, I would suggest that, or a good ethnic grocery store in your area (not Mexican as it’s a different oregano) as a source for true Greek oregano. It really does make a difference.”

Ingredients

For the salad:

  • 1 1/2 medium cucumbers chopped
  • 1 cup cherry tomatoes sliced
  • 25 green olives sliced
  • 2 oz feta cheese
  • 1/4 medium red onion thinly sliced

For the dressing:

  • 3 1/2 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/4 tsp dried Greek oregano
  • 1 tsp minced garlic
  • lemon juice (ideally fresh) to taste
  • Salt and pepper to taste

Instructions

  • Chop and prepare all of the ingredients for the salad.
  • Mix the salad ingredients together in a large bowl, and toss to combine.
  • In a jar, combine the ingredients for the dressing. Place the lid on the jar, and shake to combine the ingredients well.
  • Pour the dressing over the salad, and place the salad into individual pint-sized jars or other containers for an easy on-the-go meal.

Notes

  • A medium cucumber and a medium red onion each weigh about 7 oz.
  • This will store well in the fridge for up to 24 hours.
