One-Pot Keto Thai Red Curry Rice

If your meals are sorted, your life is sorted. And who better can understand this than a Veg keto follower. Time-saving, energy-saving, guaranteed deliciousness, are some of the exotic words that can be relished for this recipe. Love this one-pot type dish, where you throw up anything and the result is just out of the world, damn delicious. Enjoy!!!

IngredientsStep 1Fresh coconut 1/2 cupWater 1/4 cupStep 2Oil 1 tbspRed Thai curry paste1 tbspWater 1/4 cupMushrooms 1/2 cupColoured Capsicums 1/2 cup
Eggplants 1/4 cup Zucchini 1/4 cupSalt 3/4 tspCauli-rice 200gBroccoli 1/4 cup


Step 1

In a mixer jar, drop the coconut flesh without skin with some water and puree it finely.

Step 2

heat a nonstick pan add oil

Add the coconut paste and saute for few seconds

Now add the red curry paste and mix it

Now add the vegetables one by one and saute them. 

Add water and salt

Cover & cook for 10 mins.

when tender add in the cauli-rice and cook for 5 mins more. 

Lastly, add the broccoli and give it a single boil

Shut the stove and garnish with fresh basil leaves

Serve hot.
