This is a recipe from my Cookbook “ The Beginner’s Keto Meal Plan: A Six-Week Guide to Starting Your Keto Diet the Right Way”  . My roasted Greek Salmon is colorful and flavorful, this dish gives you all the Greek vibes! This salmon is one of my favorite dishes to prepare, and it always leaves me feeling like I just stepped onto the beaches of Santorini!

Roasted Greek Salmon

Makes 4 Servings

1 serving: 434 Calories, 37 g Fat, 4 g Carbs, 32 g Protein


1⁄4 cup (60 ml) olive oil

1⁄4 cup (60 ml) lemon juice

2 cloves garlic, minced

11⁄4 tsp (2 g) oregano

1⁄2 tsp red pepper flakes

1⁄2 cup (56 g) feta cheese, crumbled

1⁄2 cup (100 g) cherry tomatoes, halved

1⁄4 cup (45 g) kalamata olives, pitted

1⁄4 cup (65 g) cucumber, diced
1⁄4 cup (40 g) red onion, diced
1 tsp dried dill

1⁄4 tsp salt
1⁄4 tsp black pepper


1 lb (454 g) salmon fillets 2 tbsp (30 ml) olive oil
1⁄2 tsp salt
1⁄4 tsp black pepper


Preheat the oven to 375°F (190°C).

To prepare the topping, in a medium bowl, mix together the olive oil, lemon juice, garlic, oregano, red pepper flakes, feta cheese, tomatoes, olives,cucumber, onion, dill, salt and black pepper.

To make the salmon, in an oven-safe dish, place the salmon fillets skin side down and drizzle with the olive oil, salt and black pepper. Bake for 10minutes then add the topping evenly over the fillets. Bake until pink and flaky, about 10 minutes.
